Chuck's Favorite Mac and Cheese Recipe
Macaroni is mixed with shredded Cheddar, Parmesan, cottage cheese and sour cream, then topped with bread crumbs and baked.
This version of macaroni and cheese keeps its tasty and unusual ingredients of cottage cheese and cheddar, but with a low-fat twist. Combined with whole grain pasta and whole wheat breadcrumbs, this healthier dish is just as satisfying and delicious.
Amazingly delicious! Love the tangy taste and lovely texture. I don't know why some people don't like it... if you want Kraft Mac n' Cheese, it's much cheaper and faster, so just make that! I used low-fat everything: cheddar, sour cream, cottage cheese. I used large shells instead of elbow macaroni (personal preference). No bread crumbs/ butter, I used a bit extra cheddar on the top. Seasoned with salt and crushed red pepper, along with garlic powder, hot sauce is also a good addition. I used a parmesan-romano-asiago blend instead of plain parmesan, and added 1/3 cup milk. I don't like cottage cheese, but it's really not noticable- though you can see curds. Amazing-- thank you! This recipe is similar to the recipe for Mac & Cheese served at the Hoggy's restaurant chain here in Columbus and it is great. Ratios of ingredients are slightly different. I use 2 cups mixed dry pasta to 16 oz of Sour Creme and I substituted 15 oz of Ricotta for the cottage cheese. Also used 24 oz of shredded Cheddar or any mixture of shredded cheese you would like. Finally uses 2 beatten eggs. I mixed the ricotta, sour creme and eggs first then added the shredded cheese and pasta. Salt and pepper to taste. Dashes of Worchester sauce and hot sauce are optional but worthwhile. I used an italian bread crumbs, parmesian melted butter mixture to top it and baked 40 min at 375. Superior recipe but not creamy, Add a 1-1/2 cups of milk if you want a creamier texture. This is a keeper
I liked the variation of this recipe but we felt it had too much breadcrumb topping. I will make it again but cut the crumbs in half! The little one loved it as mac and cheese is her favorite!!
This was a simply amazing, flavorful gourmet mac 'n' cheese. Now a HUGE FAVORITE in my family! Definitely worth trying. I added about 2 T of cayenne pepper sauce to spice it up.
My mom makes a really good Macaroni and Cheese, and she is always being asked to make some for someone. She is not really a Macaroni and Cheese person herself but she loves making it for people. I tried Chuck's recipe this past Thanksgiving and it blew my Mom's out of the water. Sorry Mom! She agrees with me also. I am originally from California and we had this restaurant in downtown Los Angeles called Clifton's Cafeteria and I thought that they made the best Macaroni and Cheese in the entire world. Well, I have finally found the recipe for it. Thank you Chuck for bringing back wonderful memories and for one of the best recipes on this site. By the way, my Mom actually loves Macaroni and Cheese now, and is always wanting me to make Chuck's Favorite Mac and Cheese. It is now my family's favorite too.
So, there are some people who like their mac and cheese a bit dryer, and some that prefer velvety mac and cheese. This one's on the dryer end, which I personally like. HOWEVER, I've modified this to incorporate some added creaminess by making a roux, adding cheese to it, pepper, paprika and shaved garlic. I add the cheese mixture to some added cheddar, sour cream and cottage cheese. This mac and cheese is perfect. I really enjoy the little pieces of cottage cheese throughout.
I loved this recipe. I followed it exactly as stated. I love the addition of the cottage cheese. It has a subtle yet sharp flavor, hard to describe. To make it a meal I brown a pound of ground beef in A1 sauce and add it to the macaroni and cheese before baking. We all loved it!
